Scallion Cheddar Pancake
Pancake is a flat and thin cake made with batter that often contain all-purpose flour, eggs, and buttermilk and cooked on a hot pan or griddle. Pancakes are popular in almost every culture. It's believed that in the Medieval times the first three pancakes cooked were each marked with a cross, sprinkled with salt, and set aside to ward off evil. In Britain and the Commonwealth of Nations and the United States, Shrove Tuesday (also known as Pancake Day) is celebrated in February or March by consuming pancakes.

The history of eating pancakes on Shove Tuesday is 1000 years ago, when the perishable ingredients had to be used up before the fasting on Ash Wednesday that is approximately 6 weeks before Easter Sunday. In the US, Shrove Tuesday is more popular as Mardi Gras or Fat Tuesday.

Pancakes can be sweet or savory. In this recipe, batter made with all-purpose flour, buttermilk, eggs, scallion, and cheddar cheese is used to make delicious savory pancakes. The savory pancakes can be served with sunny-side-up egg, bacon and yogurt, sauteed veggies, or salad.

Ingredients
Serves 4 to 5
All-Purpose Flour
1 cup (8 oz cup)
Black Pepper
A generous pinch, ground or crushed
Sugar
1 teaspoon
Butter Milk
3/4 cup (8 oz cup)
Olive Oil
1 tablespoon for batter, plus more for making pancakes
Scallion
1 1/2 plus more for serving, chopped
Baking Powder
1/2 teaspoon
Baking Soda
1/8 teaspoon
Salt
1/2 teaspoon
Egg
1
Shredded Sharp Cheddar
1/2 cup (8 oz cup)
Method
Step 1
In a bowl, mix together the all-purpose flour, sugar, baking powder, baking soda, black pepper, and salt. Then, add the eggs, buttermilk, and olive oil and whisk to make batter. Finally, add the cheese and scallions to the batter and mix gently.
Step 2
Heat a non-stick pan or griddle over medium. Drizzle the olive oil and spread it evenly to coat the pan/griddle.
Step 3
Pour a big spoonful of the batter on the hot pan/griddle, spreading in about 4 inches disc. Drizzle a few drops of olive oil, and cook for about 2 to 3 minutes until the edges begin to set and the side facing the pan/griddle turn golden-brown.
Step 4
Flip, drizzle a few more drops of olive oil, and cook for another 2 to 3 minutes until the side now facing the pan/griddle is golden-brown and crisp.
Step 5
Your Scallion Cheddar Pancake is ready. Top with more scallions before serving.
