Sichuan Rice
Sichuan or Szechuan cuisine is a type of Chinese cuisine that originated in Sichuan Province of western China. Sichuan cuisine is most popular of all China's culinary art and is famous for its spiciness and pungency due to generous use of garlic and Sichuan or chili pepper. Sichuan cuisine also features a variety of flavors, such as sweet, sour, hot, or tongue numbing and different methods of cooking, such as stir frying, deep frying, boiling, steaming, sauteing, roasting, pickling, or braising.

In this recipe, a variety of shredded or finely chopped vegetables are first stir fried with Sichuan sauce (mainly made with dried red chili peppers and lots of garlic) and some soy sauce. Precooked white rice is then added to the stir fried vegetables-Sichuan sauce mix to complete the delicious dish called Sichuan Rice. Sichuan Rice can be served by itself or with any Asian or Indo-Chinese dish, such as Chili Chicken or Chili Paneer.

Ingredients
Serves 4 to 6
Olive Oil
3 tablespoons
Whole Dried Red Chili
10, seeds removed
Soy Sauce
1 and 1/4 teaspoon
Sugar
1/2 teaspoon
Vinegar
1 teaspoon
Scallion
1/2 cup (8 oz cup), finely chopped
Carrot
1/2 cup (8 oz cup), cut into small cubes
Ginger
1/4 inch, finely chopeed
Cooked White Rice
Made with 1 cup rice (8 oz cup)
Garlic Cloves
5 to 6, finely chopped
Salt
1 teaspoon or according to taste
Water
2 tablespoons
Celery
1/2 cup (8 oz cup), finely chopped
Cabbage
1 cup (8 oz cup), shredded
Green Beans
1/2 cup (8 oz cup), finely cut
Black Pepper
1/4 teaspoon, powdered
Method
Step 1
Sichuan Sauce Recipe

Start with preparing Sichuan Sauce.

Soak the seeded dried red chili peppers in water for an hour. Then, blend the chili peppers to make a paste.
Step 2
Heat 1 tablespoon olive oil in a non-stick pan on medium-high. Add garlic and give it a stir. Bring the heat to medium, add ginger, mix well, and cook for a minute.
Step 3
Add the chili paste and cook until the oil separates. Then add 1/4 teaspoon soy sauce, vinegar, 1/4 teaspoon salt, and black pepper powder. Mix all ingredients and cook for a couple more minutes.

Note - Adjust salt as per your taste. Save rest of the soy sauce and salt for later use.

Add water and sugar, mix well, and cook for another minute. Your Sichuan Sauce is ready!

Sichuan Rice Recipe

Heat 2 tablespoons olive oil in a non-stick pan on medium-high. Add celery and give it a stir. Then, add scallions and mix.

Note - You can substitute scallions with spring onions in this dish.
Step 6
Add cabbage, carrots, and green beans and fry for 4 to 5 minutes. Then, add Sichuan sauce, soy sauce, 1/2 teaspoon salt, and mix well.
Step 7
Finally, add the precooked and cooled rice. Mix well and fry for another minute. Garnish with scallions or spring onions. Your Sichuan Rice is ready!
