Bombay Masala Sandwich
As the name suggests, Bombay Masala Sandwich is a popular street food in Bombay (a city in India) and neighboring cities. The word Masala in this dish refers to the mildly spiced mashed potatoes that is sandwiched between the bread slices. In addition to potato masala, thin rings of seasonal vegetables such as onions, tomatoes, and bell peppers are added to the sandwich. Use of Green Cilantro Chutney provides tanginess and spiciness whereas butter and cheese add richness to the dish. Chaat masala is used for adding extra flavors.

Ingredients
Serves 4 to 6
Potato
3 medium, boiled, peeled, and mashed
Ginger
1/8 inch (a small piece), finely crushed
Coriander Powder
3/4 teaspoon
Chaat Masala
3 teaspoons

1 medium, sliced in thin rings
Olive Oil

Turmeric Powder
1/4 teaspoon
Red Chili Powder
1/4 teaspoon or according to taste
Black Pepper Powder
1/4 teaspoon
Red Tomato
3 to 4 medium, sliced in rings
Green Bell Pepper
1, sliced in thin rings (seed and membrane removed)
Method
Step 1
Start with making Green Cilantro Chutney - In a blender, blend 2 cups cilantro leaves, 1/2 inch chopped ginger, 5 chopped garlic cloves, 1 medium or 2 small chopped tomato, 2 tablespoons lime juice, 1 to 2 chopped green chilies (optional), 2 tablespoons extra virgin olive oil, and 1/2 teaspoon salt to make Green Cilantro Chutney. Save the chutney for later use.

In a bowl, mix turmeric powder, coriander powder, red chili powder, black pepper powder, 1 teaspoon chaat masala, and 1 teaspoon salt with about 2 to 3 tablespoons of water.

Note - Save rest of the chaat masala for later use.
Step 2
In a non-stick pan, heat the olive oil (or another oil of your choice) on medium-high. Add ginger and fry until it turns light brown.
Step 3
Add the mixed spices (from Step 1) and continue to fry the spices with ginger for about 3 to 4 minutes. In this step, you'd need to add a few more tablespoons of water to prevent the spices from sticking to the pan and burning. Make sure that the spices are slightly wet.
Step 4
Then, add the boiled-mashed potatoes and mix well. Cook for another one minute and remove from heat. Your potato masala is ready for the dish.
Step 5

  • Spread some butter on two bread slices.

  • Then, spread some Green Cilantro Chutney on both slices.

  • Spread about a tablespoon of the potato masala on one of the bread slices.

  • Add a couple of sliced tomato and sprinkle a generous pinch of chaat masala.

  • Then, layer a couple slices of onion and bell pepper and sprinkle black pepper powder and some more chaat masala.

  • Finally, put a slice of cheese.

  • Then, sandwich with the other slice of bread that has butter and Green Cilantro Chutney spread on it.

Step 6

  • Apply some butter on the outer side of the sandwich on both sides.

  • Toast the sandwich on a griddle, sandwich maker, or panini press.

  • Cut into halves and garnish with Green Cilantro chutney, Tomato Ketchup, and Sev (lentil noodle) - a popular Indian snack (optional).

Similarly, make rest of the sandwiches. Serve hot.
