Besan Laddoo
Besan laddoo is a popular sweet dish in India made of gram flour (called besan in hindi), ghee (clarified butter), and sugar. Besan laddoo is used as a dessert and as a sweet treat during festivals in India.

In this recipe, gram flour is slowly roasted in ghee at a low temperature until it turns golden brown in color and gives off nutty aroma. The roasted gram flour is then mixed with powdered sugar and divided into small round balls to make the heavenly sweet laddoos. A hint of cardamom powder is added for extra flavors.

Ingredients
Serves 10 to 12
Gram Flour
2 cups (8 oz cup)
Sugar
1 cup (8 oz cup)
Pistachios
About 10, shelled and thinly sliced
Ghee (Clarified Butter)
3/4 cup
Cardamom Powder
1/2 teaspoon
Method
Step 1
Warm 3/4 cup of ghee in a non-stick pan or wok on medium-low heat.
Step 2
Add 2 cups of gram flour and mix well. Roast the flour slowly on medium-low heat until it turns golden brown in color. Keep stirring frequently to prevent it from burning.

Note - Make sure that the ghee is warm (not hot) when you add gram flour for roasting. The flour might burn if added to hot ghee.
Step 3
After roasting the gram flour for about 15 minutes, add 1/2 teaspoon cardamom powder and continue to roast the flour. It takes about 20 to 25 minutes for the flour to get cooked. The flour gets pasty in texture, turns golden brown, and gives off nutty aroma when completely done.
Step 4
Remove the roasted gram flour from heat and let it cool down to warm temperature. Add 1 cup powdered sugar and mix well to blend the flour and sugar thoroughly.

Note - Do not mix the sugar in hot flour. The flour will become moist when sugar is added to the hot flour.
Step 5
Take a handful of the mixture in your palm and shape into tight hard balls. Your first Besan Laddoo is ready.

Shape the remaining mixture into similar round balls. Decorate the top with sliced pistachios.
