Spiced Lamb Chops
Lamb chops are incredibly delicious and tender meat of lamb. Traditionally, lamb chops are marinated in lime juice, herbs, spices, and oil and can be roasted in a convection oven or grilled, barbecued, or pan-seared. Lamb meat is naturally sweet in taste and is excellent at absorbing the flavors of the marinade. Citric acid from lime juice in the marinade helps in tenderizing the meat.

In this recipe, the lamb chops are marinated in three stages: with lime juice and salt in the first stage, ginger-garlic and spices in the second stage, and finally more garlic, yogurt, and oil in the third stage. The marinated lamb chops are then roasted to well done. Spiced Lamb Chops can be served with Cilantro-Mint Chutney, tangy salad, or roasted potatoes and veggies.

The lamb chops can be replaced with goat chops in this recipe.

Ingredients
Serves 4 to 5
Lamb Chops
5 large pieces
Lime Juice
3 tablespoons
Coriander Seeds
1 tablespoon
Thai Chili
1 to 2, finely chopped
Garam Masala Powder
1/2 teaspoon
Garlic Cloves
5, peeled and finely crushed
Canola Oil
2 tablespoons
Turmeric Powder
1/2 teaspoon
Salt
1 1/4 teaspoons
Ginger-Garlic Paste
Made of 1 1/4 inch ginger and 5 garlic cloves
Red Chili Powder
1/2 teaspoon or according to taste
Yogurt
2 tablespoons
Red Chili Flakes (Optional)
1 teaspoon
Method
Step 1
In a big bowl, marinate the lamb chops with lemon juice and salt for at least 30 minutes. This is the first stage of marination for tenderizing the lamb chops.
Step 2
In the meantime, roast the coriander seeds. Set a pan on medium heat, add the coriander seeds, and dry roast the seeds by continuously shaking the pan until the seeds turn light brown.
Step 3
Coarsely crush the coriander seeds using mortar and pestle or rolling pin. Then, add the thai chilies and crush the chilies with coriander seeds to mix the two ingredients.
Step 4
Move the crushed coriander seeds-thai chilies mixture to a bowl, and add the turmeric powder, ginger-garlic paste, garam masala powder, and red chili powder. Add a few drops of water to mix the ingredients well.

Then, coat the lamb chops with the spice-mixture, and let it sit for at least another 30 minutes. This is the second stage of marination. At this stage, the lamb chops will absorb the flavors of the spices and further tenderize.
Step 5
Mix the red chili flakes (if using for extra heat), canola oil (or another cooking oil of your choice with high smoke point), yogurt, and crushed garlic in a bowl. Then, coat the lamb chops with this mixture, and let it sit for another 30 minutes. This is the third and final stage of marination.
Step 6
Preheat the oven at 450 degrees Fahrenheit/about 230 degrees Celsius. Roast the lamb chops for 20 minutes - 10 minutes on each side. Then, reduce the heat to 325 degrees Fahrenheit/about 160 degrees Celsius and continue roasting the lamb chops for another 10 to 15 minutes - about 7 minutes each side for a well done meat.

Note - Alternatively, you can grill, barbecue, or pan-sear the marinated lamb chops.

Your Spiced Lamb Chops are ready. Serve it with Cilantro-Mint Chutney, any tangy salad of your choice, or roasted potatoes and veggies.

Quick Recipe for Cilantro-Mint Chutney - In a blender, blend 1 cup cilantro leaves, 1 cup mint leaves, 1/2 inch chopped ginger, 5 chopped garlic cloves, 1 medium or 2 small chopped tomato, 2 tablespoons lime juice, 1 to 2 chopped green chilies (optional), 2 tablespoons extra virgin olive oil, and 1/2 teaspoon salt to make Cilantro-Mint Chutney.
